Gourmet Cheese Sandwich

Good god a-mighty my cheese sandwich experiment turned out a success! chef Oh, this wasn’t just your typical grilled cheese sandwich but the creation of a new sandwich altogether, using ciabatta rolls and various cheeses and herbs.

First you mix the cheeses, starting with an ounce of cream cheese (for two servings), blending in whatever suits your taste.  I used mozzarella, mild cheddar, provolone, Edam cheese from Holland, and a little soft muenster (not much since this stuff was strong). Dividing the cheese spread mixture between two rolls and sprinkling on Italian seasoning and garlic powder, I put a little pat of butter on the tops and bottoms of the rolls and placed them on a cookie sheet. Into the oven at 350 degrees for approximately 10 minutes. Yum! yum

It’s a good base if you’d care to add a meat, like maybe shredded chicken mixed in with the cheese or perhaps mild salami (as suggested by the friend who joined me for dinner last night). I’m toying with the idea of mixing the softened cheese mixture with an egg to create a quiche-like filling, adding bacon pieces and fresh spinach for flavor.

The bread is chewy on the inside, crisping up nicely on the outside, and would lend itself beautifully to so many sandwich ideas.

Ciabatta bread is some of my favorite bread of all-time. It’s the right mixture of chewy/crunchy goodness to make the best sandwiches. :-)
